Featured Upcoming Local Event
EMMA CRAWFORD
PARADE & COFFIN RACES
Manitou Springs is well known for some of their quirky events. The Emma Crawford Coffin Races are one of the highlights of the year, and have been featured on the Travel Channel numerous times.
Costumed impersonators of Emma - a 19th-century lady who was buried atop Red Mountain and whose coffin washed away several years later - ride on coffins pulled by teams of four mourners in this kooky, pre-Halloween race.
Come be a participant, or just come to watch, you'll be in for an exciting day!

| Featured Recipe
APPLE CRISP
- 3 lg. Granny Smith apples
- 1 cup sugar
- 1 Tbsp. flour
- 1/2 tsp. ground cinnamon
- 1/4 tsp. salt
- 3/4 cup uncooked oats
- 3/4 cup dark brown sugar, lightly packed
- 3/4 cup flour
- 1/4 tsp. baking soda
- 1/4 tsp. baking powder
- 1 (8-oz) stick unsalted butter
Preheat oven to 350 degrees.
Peel and thinly slice apples. Combine apples, sugar, 1 tablespoon flour, cinnamon, and salt; place in a well greased casserole dish, or individual ramekins or custard cups; set aside.
In a large bowl combine oats, brown sugar, flour, baking soda, and baking powder. Cut in butter until it resembles coarse crumbs. Sprinkle over apple mixture.
Bake at 350 degrees for 45 minutes, or until top is golden brown and edges are bubbling lightly.
Serves 6.
