PUMPKIN PIE BARS

Pumpkin Pie Bars

Found this recipe a few years ago and have been making it ever since, it's a huge hit with the family and at the B&B and it goes a long way! If you love pumpkin pie, you'll love these easy bars, enjoy!

Preheat oven to 350 degrees. Lightly spray a 9"x13" baking dish with non-stick cooking spray and set aside.

CRUST:
  • 1 box yellow cake mix
  • 1 egg
  • 1 stick butter (8 Tbsp), softened

Combine the cake mix, egg and butter and mix well with an electric mixer. Pat the mixture into the bottom of your baking dish. Set aside while making filling.

FILLING:
  • 1 (8-oz) pkg cream cheese, softened
  • 1 stick butter (8 Tbsp), softened
  • 1 (15-oz) can pumpkin puree
  • 3 eggs
  • 1 tsp. vanilla extract
  • 2 3/4 cups powdered sugar
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg

In a large bowl beat the cream cheese, butter and pumpkin until smooth.

Add the eggs and vanilla and beat together.

Add the powdered sugar, cinnamon, nutmeg, and mix well.

Spread pumpkin mixture over crust and bake for 40-50 minutes, or until softly set. Cool and refrigerate.

When ready to serve cut into 18-24 squares, top with whipped cream and sprinkle with freshly grated nutmeg. Enjoy!

TOPPING:
  • Whipped cream
  • Freshly grated nutmeg

Makes 18-24 bars, depending on how big you want them.
