Gluten-Free Vegan Coconut Crispies

Ingredients:

  • 1 1/4 cups unsweetened SMALL shredded coconut*
  • 1/4 cup almond flour
  • 2 Tbsp solid coconut oil
  • 3 Tbsp pure maple syrup

Instructions:

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper; set aside.

  2. *For SMALL shredded coconut, they should be about the size of a grain of rice. If they're larger, pulse a bit in the3 food processor until they are smaller shreds. This is important because if they're too large you won't have any chewy portions in the middle, they will all spread out.

  3. Add all ingredients to a food processor and blend until you get a tick and sticky mixture that holds together.

  4. Use a SMALL cookie scoop to scoop firmly packed balls of dough. Drop onto the prepared baking sheet, spacing at least 2-inches apart.

  5. Bake for 12 minutes, until golden around the edges. Slide parchment paper onto a cooling rack to cool completely.
