Little Cheddar Loaves

My Mom made these Little Cheddar Loaves while we were growing up, and I made them for my family, and still make them today. I make them for my hubby and myself now that we’re empty nesters, and I make them in small meatball sized balls and take them to pot lucks. They’re always a hit, and people ask me for the recipe.

*A tip about onions… I am not a chunky onion fan, so I grate my onions for some dishes, such as this one. They’re finer and the flavors blend in rather than having a chunky onion to bite into.

Ingredients:

  • MEAT LOAVES:
  • 1 1/2 lbs. ground beef
  • 3/4 cup oats (old fashioned)
  • 1 tsp. salt
  • 1/2 cup shredded cheddar cheese
  • *1/4 cup chopped onion (or grated)
  • 1 large egg
  • 3/4 cup milk
  • TOPPING:
  • 1/3 cup ketchup
  • 1 Tbsp prepared mustard
  • 1 Tbsp brown sugar

Instructions:

  1. Preheat oven to 350°F.

  2. In a large bowl combine ground beef, oats, salt, cheese, onion, egg, and milk. Shape into 8 small oval shaped loaves. Place in a shallow baking dish.

  3. In a small bowl combine ketchup, mustard, and brown sugar. Spoon on top of loaves. Bake for 45 minutes, or until meat is cooked through.
