This Sweet Potato Casserole has a crunchy pecan topping that makes it extra special and I always have to double the recipe when I have large family gatherings. I make it every time I make our Thanksgiving Turkey and at Christmas as well. Make this for your holiday gatherings and you will be the hit of the dinner party!

Ingredients:

  • SWEET POTATOES:
  • 2 lbs. (about 4 large or 6 medium), cooked and mashed sweet potatoes or yams (about 4 cups)
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 cup milk
  • 1/2 cup (1 stick) butter, melted
  • 1 tsp. vanilla extract
  • TOPPING:
  • 1 cup light brown sugar, packed
  • 1/3 cup all-purpose flour
  • 1/3 cup cold butter, chopped
  • 1 cup chopped pecans

Instructions:

  1. SWEET POTATOES:

  2. Cook the sweet potatoes by putting them in a large pot with water, bring to a boil, and boil until a knife inserted in the middle of the sweet potatoes cuts through easily. Remove from pan and peel potatoes. The skins should peel off easily just by pulling them, you should not need to peel them with a potato peeler. Place potatoes in a large mixing bowl and mix until mashed.

  3. Preheat oven to 350°F. Add the remaining sweet potato ingredients to the sweet potatoes in the mixing bowl and mix til combined. Place in a buttered 9x13-inch casserole dish.

  4. TOPPING:

  5. In a small bowl combine the brown sugar and flour. Using a pastry cutter, or 2 knives, cut in the butter until the mixture resembles small peas. Stir in the pecans. Sprinkle over the sweet potato mixture in the pan.

  6. Bake for 1 hour, or until heated through. I double the recipe and put it in a larger pan and it takes 1 1/2 hours.
