Bernaise Sauce is similar to Hollandaise Sauce but has a couple extra ingredients making it more flavorful and elevated. It’s a great accompaniment on a good steak, and vegetables, and as a dipping sauce for Fondue.

Servings: about 1 cup

Ingredients:

  • 3 egg yolks
  • 2 Tbsp white wine vinegar
  • 1 tsp. lemon juice
  • 1 Tbsp water
  • 1 cup (2 sticks) butter, melted
  • 1 tsp. tarragon
  • salt and pepper to taste

Instructions:

  1. In a small saucepan mix together eggs, vinegar, lemon juice and water. Over a double boiler, or VERY low heat, drizzle in butter while stirring constantly, until thickened. Stir in tarragon, and salt and pepper.
