Chicken Salad is one of those great dishes that becomes a staple for a summer salad or sandwich. There is such a variety of ways you can serve this salad. Serve it over a bed of bib lettuce as a refreshing summer salad, or even a fairly healthy main entree, serve it in some whole grain bread for a sandwich, or serve it on mini croissants for a fancier sandwich and served at a tea party, or open faced on small cocktail bread or toast for a nice appetizer or tapas. No matter how you serve it, they will surely be gobbled up. Enjoy!

Ingredients:

  • 1 (13-oz) can cooked chicken breast meat, drained and shredded (you can also use fresh chicken, cooked and cut up or shredded as well)
  • 1/2 medium apple, chopped*
  • 1/2 cup walnuts, coarsely chopped (optional)
  • 1/2 cup shredded Colby-Jack cheese (or other cheese that you like)
  • 1/2 tsp. salt
  • Mayonnaise (as much as you need to make to your desired wetness)
  • Bread, Croissants, Toast, Lettuce (optional)

Instructions:

  1. In a large bowl mix together all ingredients except mayonnaise and bread.

  2. Add enough mayonnaise to make it as moist as you would like. Serve on lettuce leaves, bread, croissants, toast, or anything else you may like.

  3. *In addition to, or instead of apples, try adding other ingredients that you may like such as grapes cut in half, raisins, dried cranberries or dried cherries. There is no right or wrong to this recipe, personalize it and make it yours!
