I love appetizers, almost as much as desserts! Every holiday we have about a dozen appetizers before the main meal. These Crostini with Gorgonzola cheese, Caramelized onions, and sweet fig jam are one of my favorites. I have to confess, I actually have several favorites, this is just one of them.

You can make the jam and onions ahead of time and keep them in the fridge until you are ready to assemble. Just pull them out of the fridge a few hours ahead of time and let them come to room temperature.

Ingredients:

  • FIG JAM:
  • 1 cup dried figs (about 6 ounces)
  • 1 tsp. lemon juice
  • 2 cups water
  • 2 Tbsp maple syrup
  • Dash salt
  • CARAMELIZED ONIONS:
  • 2 Tbsp melted butter
  • 1 Tbsp olive or canola oil
  • 2 yellow onions, peeled, halved and thinly sliced
  • 1 tsp. balsamic vinegar
  • 1/2 tsp. fresh thyme
  • 1/4 tsp. salt
  • CROSTINI:
  • 1/2 cup (4 oz) Gorgonzola cheese, softened
  • 24 (1-inch thick) slices diagonally cut French bread baguette, toasted (about 12 ounces)
  • 1 tsp. chopped fresh parsley

Instructions:

  1. FIG JAM:

  2. Remove stems from figs. place figs and lemon juice in a food processor, and process until figs are coarsely chopped. Place fig mixture, water, syrup, and salt in a medium sauce pan, and bring to a boil. Reduce heat, and simmer 25 minutes or until thick. Cool completely.
    *TIP: This can be in made advance and refrigerated. Bring to room temperature before assembling.

  3. CARAMELIZED ONIONS:

  4. Heat butter and oil in a large skillet over medium-low heat. Add onion, balsamic vinegar, thyme, and salt; cover and cook about 25 minutes, stirring occasionally, until onion is deep golden brown.
    *TIP: This can be in made up to 2 days in advance and refrigerated. Bring to room temperature before assembling.

  5. CROSTINI:

  6. Spread one teaspoon cheese over each baguette slice. Top each slice with about one teaspoon caramelizing onions and one teaspoon jam. Sprinkle evenly with chopped parsley.
