These Danish jam-filled pancakes, known as Ebelskivers, are a delightful breakfast treat, or even a dessert. They are easy to make, but you need to have an Ebelskiver pan, which can be purchased here on Amazon.

They can be filled with Jam, Nutella, Lemon Curd, Lingonberries, chopped bananas, or anything else you may want in your pancakes when you bite into them.

You can fill them with jam by adding a small amount of batter, a little bit of filling, then the remaining filling, or add the filling later by using a pastry bag and round tip and and squeeze the filling into the Ebelskivers once they are baked.

Dust them with some powdered sugar and you’ve got a fancy treat. You can also drizzle them with caramel or chocolate sauce as well.

Ingredients:

  • 4 cups all-purpose flour
  • 5 tsp. baking powder
  • 3/4 tsp. salt
  • 1 cup packed light brown sugar
  • 3 eggs, lightly beaten
  • 3 cups milk
  • 1 1/2 tsp. vanilla extract
  • about 5 Tbsp unsalted butter, melted
  • 1 cup seedless jam, nutella, mashed ripe bananas, or any other filling you may like
  • 1/2 cup powdered sugar
  • 2 tsp. ground cinnamon

Instructions:

  1. In a bowl, sift together the flour and baking powder. Whisk in the salt and brown sugar.

  2. In another bowl whisk together the eggs, milk and vanilla. Whisk the egg mixture into the flour mixture until smooth.

  3. Put 1/4 tsp. butter into each well of Ebelskiver pan. Set over medium heat and heat until the butter begins to bubble. Pour 1 Tbsp. of batter into each well. Add 1 tsp. of filling of choice into the middle of each batter. Carefully cover each well with 1 Tbsp of batter, being careful to cover filling. OR, you can fill each well with 2 Tbsp batter and use a pastry bag to fill them after they have been cooked.

    Cook until the bottoms are golden brown and crispy, 3-5 minutes. Using wooden skewers, turn the pancakes over and cook until the other side is brown and crispy, about 3 more minutes. Transfer to a tray and continue until all the batter has been used.

  4. If you haven't already put the filling in while making the pancakes, fill a pastry with a large round tip with your filling and squeeze a small amount into the middle of each ball, being careful not to overfill and break your Ebelskivers.

  5. Combine powdered sugar and cinnamon and using a sifter, sprinkle over Ebelskivers. Best served warm. You can also drizzle them with caramel or chocolate sauce.
