I make these rich, Glazed Mint Brownies for St. Patrick’s Day. The green is festive for the holiday, and brownies always make a great dessert all year round!

  • 2 squares (1 oz each) unsweetened chocolate
  • 1/2 cup (1 stick) butter
  • 2 large eggs, room temperature
  • 1 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 3 Tbsp butter, softened
  • 1 1/2 cup powdered sugar
  • 2 Tbsp milk
  • 3/4 tsp peppermint extract
  • 3-4 drops green food coloring
  • GLAZE:
  • 1/2 cup semisweet chocolate chips
  • 2 Tbsp butter



  2. Preheat oven to 350°F. Grease a 9-inch square baking pan, set aside. In a microwave bowl, melt chocolate and butter until smooth. Cool slightly. In a large bowl beat the eggs, sugar and flour until blended. Stir in the chocolate mixture. Pour into greased pan. Bake 20-25 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.


  4. In a bowl beat the filling ingredients until creamy. Spread over brownies.

  6. In a small saucepan melt chocolate and butter; stir until smooth. Spread over filling. Refrigerate until filling and glaze are set.
