There are so many different types of fruits out there, and we love pretty much all of them. At the Bed and Breakfast we ran for nearly 19 years we served a 3-course breakfast, which always started with a fruit course. This Grilled Malibu Pineapple was always a hit. And it’s great year round. We would make it out on the BBQ grill in the summer, and on grill pans indoors in the winter (if the weather didn’t permit outdoor grilling).

Marinading the pineapple slices in Malibu Coconut Rum is what makes this Grilled Malibu Pineapple so delicious! If you don’t want the alcohol, grilling it in it’s natural juices is just as delicious. And if you’re marinading the pineapple with rum, make sure to save the rum for some sipping rum later on during cocktail hour!

Ingredients:

  • 1 fresh pineapple, cut into slices with the core removed
  • 1 cup Malibu Coconut Rum
  • 1/2 cup fresh blueberries
  • Mint leaves, for garnish

Instructions:

  1. Marinade pineapple slices in Coconut Rum for about 30 minutes, turning after about 15 minutes. You can marinade them longer or overnight as well.

  2. Preheat grill and grill on each side until warmed. Add blueberries to the center and top with mint leaves for garnish.
