Irish Flag Salad

This refreshing Irish Flag Salad, with spinach, pears, oranges, Feta cheese, and pistachios brings together the green, white and orange colors of the flag of Ireland. Not only is it pretty, but tastes delicious too!

Ingredients:

  • DRESSING:
  • 3 Tbsp canola oil
  • 2 Tbsp orange juice
  • 1 Tbsp lemon juice
  • 1 tsp. honey
  • 1/2 tsp. grated orange zest
  • 1/4 tsp. salt
  • SALAD:
  • 1 (6 oz) pkg fresh baby spinach
  • 2 medium pears, thinly sliced
  • 2 medium oranges, peeled and sectioned, or 1 (15-oz) can mandarin oranges, drained
  • 2 Tbsp crumbled feta cheese
  • 2 Tbsp chopped pistachios

Instructions:

  1. DRESSING:

  2. Shake the dressing ingredients together in a jar; chill until ready to serve.

  3. SALAD:

  4. Divide spinach among four plates; top with pears, oranges, cheese and pistachios. Shake salad dressing and drizzle over salad.
