This easy recipe is a great way to elevate and fancy up plain scrambled eggs. It can be made in individual dishes, or in one casserole dish. It can even be made ahead of time and baked in the morning. It is very versatile. You can put whatever ingredients you like over the eggs in the casserole dish to personalize it. Try different toppings such as peppers, mushroom, onions, green chilies, asparagus, tomatoes, artichoke hearts, black olives, sun-dried tomatoes, spinach, and more. And you can use different types of cheeses such as cheddar, Gruyere, Swiss, Asiago, Feta and more. Enjoy!

Ingredients:

  • CREAM SAUCE:
  • 2 Tbsp butter
  • 2 Tbsp. flour (all-purpose, whole wheat, and even gluten-free all work fine)
  • 1 cup milk, heated
  • Salt and Pepper, to taste
  • EGG LAYERS:
  • 8 large eggs, beaten
  • 4 Tbsp sour cream; or non-fat, plain Greek yogurt
  • 4 Tbsp Colby-Jack cheese, grated (or any choose you like)
  • 4 strips bacon, fried crisp and crumbled
  • Cooked, crumbled sausage, optional
  • Any other toppings you may like, such as tomatoes, green chiles, mushrooms green onions, olives, artichoke hearts, etc.

Instructions:

  1. Preheat oven to 350°. Spray 4 individual 16-oz ramekins, or a 2-quart casserole dish with non-stick cooking spray; set aside.

  2. CREAM SAUCE:

  3. Melt butter in a medium sized saucepan. Whisk in flour. Stir over medium until bubbly and thick, stirring constantly. Slowly whisk in hot milk, stirring constantly, and continue cooking and stirring until it's bubbly and thick, about 1 minute. Add salt and pepper to taste, set aside.

  4. EGG LAYERS:

  5. Scramble eggs until cooked through. Turn heat off and add cream sauce to eggs. Pour into ramekins or casserole dish. Spread sour cream over eggs in a thin layer. Top with any of the toppings you would like, then top with cheese and finally green onions and bacon as the top layers. Bake for about 20 minutes, until hot and bubbly.
