Peaches Supreme

I absolutely LOVE peaches! And I get several bushels of them from White Orchards in Palisade, Colorado every summer and go to town eating tons of them, sharing them with friends and family, serving them to guests at our Bed and Breakfast Lodge, and canning them. This is a favorite fruit dish I serve at the B&B. Enjoy!

Ingredients:

  • 2 oz. cream cheese, softened
  • 2 tsp. apricot or peach preserves
  • 1 (8-oz) can crushed or pineapple tidbits, drained
  • 2 large peaches, washed, halved and pitted
  • 1 Tbsp chopped, toasted pecans
  • Fresh mint leaves, for garnish

Instructions:

  1. In a small bowl combine cream cheese and preserves; blend well. Stir in pineapple. Chill.

  2. Slice a small portion from the base of each peach half so the fruit sits flat; reserve peach slices. Arrange peach halves on service plates. Spoon 1/4 of the cream mixture into each peach half; sprinkle with toasted pecans. Garnish with reserved peach slices and mint leaves.
