These Peppermint Patty Stuffed Chocolate Cookies are a great holiday cookie. Starting with a boxed chocolate cake mix they are also super easy to make, and can be made in about 30 minutes from start to finish!

Ingredients:

  • 1 box chocolate cake mix
  • 1 tsp. baking powder
  • 2 large eggs
  • 1/2 cup vegetable or canola oil
  • 1 bag Mini York Peppermint Patties
  • Candy sprinkles

Instructions:

  1. Preheat oven to 350°F. Line two baking sheets with parchment paper; set aside.

  2. In a large bowl, whisk together cake mix and baking powder. Add eggs and oil and stir until fully combined.

  3. Use a medium cookie scoop and use your hands to make balls. Place a Peppermint Patty in the center and fold dough over to completely cover and pinch closed. Roll into a ball again if necessary. Transfer to a baking sheet and repeat with remaining dough. Sprinkle with candy sprinkles.

  4. Bake for 8-10 minutes. Let cool for 1 minute on baking sheet, then transfer parchment paper with cookies onto a wire rack to cool completely.
