Pineapple Casserole with pineapple chunks, cheese, and a crumbly bread crumb toppingI received this recipe from a fellow innkeeper a number of years ago when they brought it to a potluck I was hosting at the Lodge. It was such a huge hit that several of us asked for the recipe. It is an excellent accompaniment to ham and I have been making it every time I make ham ever since, and several of my family members have also asked for the recipe. From the ingredients it may sound like “one of these things is not like the other, one of these things just doesn’t belong”, but trust me, all of these ingredients together with leave you pleasantly surprised and when you make people will be asking you for the recipe.   • 2 (20-oz each) cans pineapple chunks
  • 1/2 cup sugar
  • 3 Tbsp. flour
  • 1 cup shredded cheddar cheese
  • 1/4 cup (1/2 stick) melted butter
  • 1 cup crushed Ritz crackers


  1. Preheat oven to 350°F. Grease a 2-quart casserole dish, set aside.

  2. Drain pineapple, reserving 3 tablespoons juice.

  3. Combine sugar, flour and 3 tablespoons reserved pineapple juice. Add cheese and pineapple chunks. Mix well and spoon into prepared casserole dish.

  4. Combine butter and cracker crumbs and sprinkle over pineapple mixture. Bake 30 minutes, or until crumbs are lightly browned.
