Who doesn’t have those bananas leftover that you don’t eat before they start turning brown. This is an excellent way to use up those bananas. Servings: 1 loaf

Ingredients:

  • 1/3 cup butter flavored Crisco
  • 1 cup sugar
  • 1 cup sourdough starter (see link in description above)
  • 1 large egg
  • 1 tsp. vanilla extract
  • 1 cup mashed banana (about 3 bananas)
  • 2 cups flour
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 tsp. salt
  • 3/4 cup chopped walnuts (optional)

Instructions:

  1. Preheat oven to 350° Grease and flour one 9"x5" loaf pan, set aside.

  2. Cream together the shortening and sugar. Add sourdough starter, egg and vanilla and mix until just blended. Stir in bananas.

  3. In a separate bowl sift together flour, baking powder, baking soda, and salt. Add flour mixture to wet ingredients just until blended. Stir in walnuts if desired. Pour into greased loaf pan. Bake for 1 hour, or until a toothpick comes out clean. Cool before slicing.
