These Thai Shrimp are great for an appetizer or a light refreshing lunch or dinner on a hot summer day. It’s easy to make and only takes a couple of minutes to mix everything together, then just refrigerate in the marinade for 30 minutes and enjoy!

Put them on skewers for a potluck or along with a BBQ. And serve it over Thai noodles for a Thai dinner. Or over a bed of lettuce for a refreshing salad.

This will serve 8 as an appetizer, or 4 as an entree.
