Roasted Tomato and Green Chile Salsa
Chips and Salsa are a staple just about anywhere. My husband likes to have chips and salsa several times a week. This salsa (Salsa de Molcajete) is packed full of flavor. Roasting the tomatoes, garlic and peppers bring out so much more flavor. It's easy to make and cheaper than any store bought salsa you can buy. Risotto is an Italian rice dish that is savory and creamy and oh so delicious! There are a variety of ways you can change up basic risotto, but the basic risotto is so good just by itself. This recipe is for Mushroom Risotto, but you can change it up. Instead of mushrooms you can add cooked shrimp, peas, or just leave it plain with the creaminess of the risotto itself along with some Parmesan cheese.…... view full recipe
My Mom made Swedish Meatballs as an entree with buttered egg noodles when I was growing up and I love them to this day! I've tweaked on the sauce from her recipe just a tad and have come up with our favorite sauce. I often make them as an appetizer and serve them right in the crock pot without the noodles. Great for a holiday or party. And if you don't want to take the…... view full recipe

These Potato Skins are easy to make, and even easier to eat! They disappear so fast whenever I make them as an appetizer. They are always a sure bet to never have any leftovers. I often use small baby potatoes for these and they're "popper" size. But you can use full sized potatoes as well for larger ones. Typically with the larger ones I'll cut each half into 2 or 3 wedges to make them…... view full recipe

These Jalapeno Poppers are super popular in my family. When I host a party, I ALWAYS have to have these Jalapeno Poppers or I will be chastised. They aren't hard to make, and are always a hit. I have to make at least double what I would think I need because they go fast, and they are also great as leftovers. I also try to get jalapeno peppers that are more hot, as those are…... view full recipe
My daughter shared this recipe for Buffalo Chicken Dip with me several years ago. She makes it all the time for her family as appetizers, they all love spicy foods. This is more of a "medium" heat. If you want it spicier, add more wing sauce. If you want it more mild, add less. You can also change it up and make it a BBQ Chicken Dip by substituting BBQ sauce for the wing sauce.…... view full recipe
